I think I know what you are doing.  When i do this, i put the couple under a skrim.  That sofens the shadows a whole lot.  Then I add flash, ussually ring flash.

What you're describing is softening the sun, not overpowering. What I'm trying to get is the ambient underexposed 1-2 stops

Nope, that's not overpowering the sun. OVER is the key word here, as in "more bright the the sunlight", at least by 1, better yet - by two stops.

I used this same setup with the flash and an umbrella here. iso200, 1/160 maybe f11 or so.
