This photo shows a dark strain of bees on a section of a newly drawn out frame honeycomb, with sealed honey and fresh nectar. Fresh nectar, as collected from the blossoms contains approximately 80% water - the bees concentrate this solution by moving the nectar from cell to cell and continuously fan with their wings to drive off the water. When the contents of the cell are approximately 80% sugars, the honey is ripe and the bees seal it off.
