2 clove garlic, minced
1 tsp (5mL) vegetable oil
1 medium red pepper, thinly sliced
1 medium green pepper, thinly sliced
1 medium onion, thinly sliced
8 mushrooms, sliced
½ tbsp (7mL) chili powder
Pinch cayenne (optional)
1 medium tomato, chopped
2 cups (500m) black beans, prepared from dried
12 small corn tortillas
Condiments
Salsa
Light sour cream
Light cheddar cheese

Heat oil and garlic in a large non-stick skillet over medium-high heat until fragrant. Add red pepper, green pepper, onion and mushrooms to skillet and sauté for several minutes until slightly tender, about 4 minutes. Add black beans and tomato and continue to cook until warmed throughout. If corn tortillas are firm, place on a medium heat skillet for 30 seconds. Spread ½ tablespoon of each; salsa and sour cream, cheese on each tortilla (2 each per serving). Followed by vegetable and bean mixture and roll up by tucking the bottom of one end and folding in each side.
