Thousands of tiny bubbles can be seen just beneath the glossy surface of this newly-made peanut brittle candy. This circular piece is about a foot (30 cm) in diameter. It has just been poured and cooled, and will later be broken into individual pieces. The bubbles soften the bite into what would otherwise be very hard candy. For some, peanut brittle is a traditional Christmas treat. Others consider it a year-round confection.
