Description

'This ancient staple food is a traditional starch meal - either a full meal or side serving, it is typically African and usually cooked in a huge iron communal pot swinging over an open fire. It is made from dried corn and kidney beans, mixed in a ratio of about 7:1, boiled and only salted after the cooking has finished.Real comfort food, 'Samp and Beans' is becoming very popular in upmarket restaurants on the tourist track. Re-invented by chefs with added ingredients (chilli, onion, tomato, lime) it is presented as a risotto style meal much appreciated by tourists and locals alike.Photographed in my kitchen using available daylight and a tripod/slow exposure, traditionally styled with old Zulu bowls, gourds, an enamel dish and a bone handled salt spoon on a vintage chopping block.
