The riders are playing the roles of the champions of the four nations of the United Kingdom (England, Wales, Scotland and Northern Ireland).

The knights are playing the roles of the champions of the four nations of the United Kingdom - England (white with the Cross of St. George), Wales (green and white with red dragon), Scotland (the red and yellow Royal Standard of Scotland) and Northern Ireland (green and black with cross motif).

However, since we're in Scotland here, the knight representing England is the evil Black Knight... and he won't win.
