A happiness artisan making "melcochas" a traditional candy from Baños, Tungurahua, Ecuador. Melcocha is a special kind of candy handmade in many places around the country, though it is mainly produced in the small town of Baños in the highlands of Ecuador. The melcocha or marshmallow comes from the Spanish confectionery tradition that arrived in America due to the conquest, since it bears great similarities to the alfeñique. It is basically made up of molasses or thick honey, usually panela. Likewise, it can be made from sugar honey, which is beaten until the incorporation of air results in a porous and malleable paste, with an elastic or rubbery consistency, with which candies or chocolates are made in various ways, although the traditional one is of twisted bars.1 The traditional way of working marshmallow is to stretch the dough, with oiled hands, and fold it on itself, until obtaining a solid sweet.
