Overhead view of a dish of baked eggs with avocado, crispy serrano ham, toasted sourdough bread. Recipe, cut the avocado in half and remove the stone, use small sized eggs, discard some of the egg white if desired and pour the remaining yolk and white into the hole left by the avocado stone, season with salt and pepper and some chives and or some chilli flakes and in this case some roasted pine nuts. Bake for around 10-12 minutes at 200 degrees until the egg whites have set but the yolks are still runny. Serve with toasted bread and balsamic vinegar, delicious.
