Dry salt marshes in Camargue in the Gard Occitanie The exploitation of salt in Aigues-Mortes is an economic activity that dates back to antiquity. The first activity of the saltworks is attributed to a Roman engineer, Peccius, who left his name to the marsh of Peccais. During the Middle Ages, when the village of Aigues-Mortes was strongly influenced by the nearby Abbey of Psalmodie, the economy was mainly oriented towards fishing and saltworks. During the reign of Louis IX, when the abbey came under his domination, part of the marshes were cleaned up, to facilitate the activity and trade of the region. Local development was continued under the reign of Philip III, known as the Bold and Philip IV, known as the Bel, and saw the creation of the ramparts of Aigues-Mortes.

It was in 1856 that the Salins d'Aigues-Mortes were incorporated, by the grouping of owners, to become the company Renouard et Cie. In 1868, the company changed its name. The Compagnie des Salins du Midi then set up its head office in Montpellier.

Salt pans have been included in the general inventory of cultural heritage since 22 December 1995, both for the production site and for the administrative and housing buildings.
